Chicken Afritada is one of the simplest way cooking a chicken and it so easy to prepare that can be cooked on a regular days. This dish is one Filipino favorites specially for lunch matching with steamed white rice. Another Simple Recipe that you can try and enjoy.
Ingredients
1 ½ lb. chicken cut into serving pieces
1 small red bell pepper sliced
1 medium baking potato cut into cubes
1 medium carrot cut into cubes
1 8 oz. can tomato sauce
1 Chicken Cube
4 to 5 pieces dried bay leaves
1 small onion minced
4 cloves garlic crushed and minced
1 ½ cups water
3 tablespoons cooking oil
Salt and ground black pepper to taste
Instructions
Heat the oil in a wok.
Saute garlic and onion
Add chicken and cook both sides until it turns light brown.
Add tomato sauce and water and let boil.
Put the dried bay leaves and add the Chicken Cube. Stir and cover then cook between low to medium heat for 30 minutes or until the chicken gets tender.
Add the carrot, bell peppers, and potato and cook for 10 to 15 minutes.
Add salt and ground black pepper to taste. Cook for 3 minutes more.

In this dish my wife use only tomato paste that is why it looks a bit dry but it taste so good still.
