Pork Menudo with Cheese

In most occasions we mostly seen this in the table because of the yummy taste for a heavy meal and good for pulutan too. I was also a big fan of this recipe even if I ate it over and over again specially with a liver kick on the taste this made me a lot to get more even without a rice.However, there are people don’t want to include liver on the dish because of its gamy taste. But there is a technique how to get rid of the gamy taste making it more pleasurable to eat (In the procedure You'll know how it goes). What I learn is, you can make the dish more delicious by adding cheese to it and for sure kids will love it too.


Ingredients
  • ½ kg. pork, cubed
  • pig’s liver, cubed
  • hotdogs, sliced diagonally
  • 2 medium potatoes, cubed
  • 1 enough sized carrots, cubed
  • 2 medium onion, chopped
  • 2 teaspoons minced garlic
  • 1/2 canned green peas
  • 3 pieces bay leaves
  • 15 oz. tomato sauce
  • 3 tablespoons cooking oil
  • Raisins, but optional
  • Salt and pepper to taste
  • Cheese for toppings
Cooking Procedure
1. Heat the cooking oil in a wide cooking pot.
2. Saute the hotdogs for a minute. Set aside hotdogs in a plate and leave remaining cooking oil.
(do this procedure if you have added liver if not jump to number 6)
3. On the same pot, add the ginger and saute for a minute.
4. Put the liver in and continue to saute for 2 minutes.
5. Transfer to a plate and leave the remaining cooking oil again and set the liver to the side.

6. Now, saute the onion and garlic in enough cooking oil until becomes soft.
7. Add the pork and continue to cook until light brown.
8. Add the raisins (if there is), pour the tomato sauce and bring to a boil.
9. Add the dried bay leaves and simmer for 45 to 60 minutes or until the pork becomes tender.
10. Put-in the sauteed liver (if there is) and hotdog. Stir.
11. Add the carrots and potatoes and cover, cook for 8 to 10 minutes.
12. Put green peas.
13. Add salt and pepper to taste.
14. Add grated cheese as a toppings

Serve and enjoy!
